1 lb. bacon, diced
1 medium onion, diced
2 lb bag frozen hash brown potatoes
1 c grated cheddar cheese
1/2 cup salsa
12 eggs

Directions:
Directions:
Preheat oven to 350°. Using a 12 inch Dutch oven or oven safe skillet brown bacon and onion until done. Stir in hashbrowns and cook until browned, 15 minutes. Scramble eggs in a separate bowl and pour the mixture over the hash browns, cover and cook in oven until eggs set, about 20 minutes. Remove cover and add shredded cheeses to top, cooking 5-7 more minutes until cheese melts. Let cool for 5 minutes, slice and pass with more salsa.

Note: this could be made with any breakfast meat. Be sure to add salt-and-pepper to the hashbrowns as you are cooking them.
