8 eggs
3/4 cup olive oil
1/4 c red wine vinegar
1garlic clove , peeled and chopped
Salt and pepper

2heads romaine lettuce, chopped
2oz each ( about 1/3 cup grated Parmesan, Romano, and Argentine Reggianito cheeses ( 1 cup total)
Toasted croutons
Anchovies (optional)

Directions:
Directions:
place eggs in boiling water for 2 minutes
Drain
Separate eggs and save yolks. ( diehard whites)
In a large bowl put in yolks, oil , vinegar garlic
Whisk by hand or electric mixer on high until creamy
Salt and pepper to taste
Add lettuce and cheese to bowl
Add dressing
Toss until leaves are coated
Add croutons and toss lightly before serving
Garnish with anchovies If desired
