Ingredients:  
Ingredients:  
1 can drained black-eyed peas
1 can white corn (or) white frozen corn
5 roma tomatoes, diced
2 avocados, diced
1/2 cup chopped cilantro
1/2 cup chopped green onions

Sauce:

1/2 cup olive oil
1/2 cup red wine vinegar
2 cloves garlic (or) 2 tsp. minced garlic
1 tsp. pepper
1 tsp. salt
1 tsp. cumin

Directions:
Directions:
In a small bowl, combine sauce ingredients and set aside. In a large bowl, combine beans and vegetables. Add sauce and mix well

Use as garnish for meals, or eat with chips,
