8 cups diced peeled potatoes
⅓ cup chopped onion
3 cans (14½ oz. each) chicken broth
1 can (10¾ oz.) condensed cream of chicken soup, undiluted
¼ tsp. pepper
1 package (8 oz.) cream cheese, cubed
½ pound sliced bacon, cooked and crumbled, optional
Snipped chives, optional

1. In a slow cooker, combine the first 5 ingredients.
2. Cover and cook on low for 8-10 hours or until potatoes are tender.
3. Add cream cheese; stir until blended.
4. Garnish with bacon and chives if desired.

Yield: 12 servings (3 quarts)

This soup is so easy and savory! It is eash to assemble in the morning, then cook all day. Cream cheese and a sprinkling of bacon provide richness.
