2 1/4 cup cake flour - *see note below
1 1/2 cup sugar
1 1/2 tsp b. powder
1/2 tsp salt
1/2 cup soft shortening
3/4 cup milk
3 egg whites, room temperature
1 tsp vanilla
1/2 tsp almond flavouring

Preheat oven 350ºF.
Grease two 8" round cake pans. Line bottoms with parchment paper.

In a large bowl, sift flour, sugar, b. powder and salt. Add shortening and milk. Mix to blend lightly, then increase speed and beat at medium for 2 minutes. Add egg whites and flavourings. Beat 2 minutes. longer. Divide batter into the pans.
Bake 350ºF for 25-30 minutes. Cool 5 minutes then turn onto racks to cool.

1 cup flour minus 2 Tbsp. Add 2 Tbsp cornstarch and sift 5 times
