1 pkg or 2 1/4 tsp active dry yeast
1 cup warm water
1 Tbsp sugar
2 Tbsp oil - olive or canola
1 tsp salt
3 3 1/4 cup flour
cornmeal

1 tsp cold water

Directions:
In a large bowl, dissolve yeast in warm water with the sugar. Let sit about 5 minutes. Add oil, salt and 2 cups of flour. Beat until blended; add enough remaining flour to form a stiff dough. Knead 6 - 8 minutes.

Place in an oiled bowl, turning dough to oil top. Cover and let rise in a warm place until doubled in size, about 1 hour. Punch dough down and return to bowl and let rise for 30 minutes.

Punch dough down. Turn onto lightly floured board. Shape into a 16-in. x 2 1/2-in loaf with tapered ends. Sprinkle a greased baking sheet with cornmeal. Place loaf on baking sheet. Cover and let rise until doubled, about 25 minutes. Preheat oven at 375ºF.

Whisk egg white and cold water. Brush over dough. With a sharp knife make shallow diagonal slashes 2 in. apart across top of loaf. Bake at 375ºF for 25-30 minutes or until golden brown. Remove to cool on a wire rack.
