1/4 cup milk OR fat-free-less-sodium chicken broth
5 T OR tsp butter, melted
1 large garlic clove, minced
1/2 cup Ritz cracker crumbs OR dry breadcrumbs
1 T grated fresh Parmigiano-Reggiano cheese
1 tsp paprika
4 6-oz skinlesss, boneless chicken breast halves
1/4 tsp salt
1/4 tsp dried oregano
1/4 tsp freshly ground black pepper
4 thin slices ham OR 2 oz prosciuttto
4 slices of imported swiss cheese (or 1/4 c - 1 oz - mozzarella cheese)

In small microwave-safe bowl: microwave butter. Stir in garlic.

Combine crumbs, Parmesan cheese, paprika in small shallow bowl. Set aside.

Place each chicken breast 1/2 between 2 sheets of plastic wrap. Pound to 1/4 inch thick using a meat mallet or rolling pin. Sprinkle both sides with salt, oregano and pepper. Top each breast half with 1 slice of ham and 1 slice of cheese. (OR 1 slice of prosciutto and 1 T mozzarella).

Roll up each breast half jelly-roll fashion. Dip each roll in milk. Dredge in breadcrumb mixture. Place rolls, seam side down, in an 8 inch square baking dish coated with cooking spray. Pour melted butter/garlic over chicken. Bake at 350 degrees for 28 minutes or until juices run clear and tops are golden. (I had large chicken breasts and cooking took 43 minutes)
