Directions:In small microwave-safe bowl: microwave butter. Stir in garlic.
Combine crumbs, Parmesan cheese, paprika in small shallow bowl. Set aside.
Place each chicken breast 1/2 between 2 sheets of plastic wrap. Pound to 1/4 inch thick using a meat mallet or rolling pin. Sprinkle both sides with salt, oregano and pepper. Top each breast half with 1 slice of ham and 1 slice of cheese. (OR 1 slice of prosciutto and 1 T mozzarella).
Roll up each breast half jelly-roll fashion. Dip each roll in milk. Dredge in breadcrumb mixture. Place rolls, seam side down, in an 8 inch square baking dish coated with cooking spray. Pour melted butter/garlic over chicken. Bake at 350 degrees for 28 minutes or until juices run clear and tops are golden. (I had large chicken breasts and cooking took 43 minutes) |
