1 can white shoepeg corn
1 can black beans, rinsed well
1 red pepper, chopped
1 orange pepper, chopped
1 small red onion, chopped

Dressing:
⅓ c. red wine vinegar
⅓ c. olive oil
⅓ c. sugar

Feta cheese
Tortilla chips (scoops are best)

Directions:
Directions:
Combine the three dressing ingredients in a small saucepan and bring to a boil. Remove from the heat and let cool. Mix all of the vegetables together. Pour the cooled dressing over them. Refrigerate for a couple of hours before serving. When ready to serve, drain off some of the juice. Crumble feta over mixture and serve with tortilla chips.
Leftover dip can be served over greens to enhance a salad.
