16 medium sized sweet potatoes

12 quart jars

water

Directions:
Directions:
Prepare water bath in canner

Peel and quarter sweet potatoes to desired size

Rinse thoroughly then pack tightly into hot quart jars (wide mouth works best)

Pour hot water over sweet potatoes in jars leaving 1 inch from brim. Cover with clean lids and rings

Place in hot water bath and lower into canner. Cover jars by 1 inch over the tops of jars.

Once water starts boiling start timing your process time per gauge below:

Pints: 40 minutes
Quarts: 55 minutes

Carefully remove from canner with canner tongs and place on a towel to cool.

Sweet potatoes don't have to be a holiday side dish. With canned sweet potatoes, you can open a jar whenever you want, heat them in the microwave and serve with butter and brown sugar.
