1/2 cup oleo
1 1/2 cups white sugar
1 egg
1 cut buttermilk
1 tsp. vanilla
1 tsp. soda
1/2 tsp. salt
2 1/2 cups flour
3 cups rhubarb, diced into small pieces
1 cup brown sugar
1/2 cups nuts, chopped

Directions:

Mix above ingredients, adding rhubarb last. Pour into greased 10x13 inch baking pan. Sprinkle with brown sugar and chopped nuts (I use pecans). Bake 45 minutes in a 350º oven. While cake is still hot, spread with topping.
 

Topping

1/2 cup oleo
1 cup white sugar
3/4 cup light cream (half & half)
1/2 tsp. vanilla

Directions:
Directions:
Boil 3 1/2 minutes or until it begins to thicken. Stir constantly. Add vanilla; pour over cake.

I'm not a rhubarb lover, but this made a believer of me. It's absolutely delicious!
