5 CUPS SWEET CHERRY JUICE
7 CUPS SUGAR
1 PKG. CERTO PECTIN
1/2 TSP BUTTER OR MARGARINE

COMBINE JUICE AND SUGAR IN VERY LARGE SAUCEPAN (DUTCH OVERN). STIRRING CONSTANTLY, BRING TO BOIL OVER MEDIUM/HIGH HEAT. ADD PECTIN AND BUTTER. RETURN TO FULL ROLLING BOIL AND BOIL FOR 1 MINUTES. REMOVE FROM HEAT AND SKIM OFF ANY FOAM WITH METAL SPOON. POUR INTO JELLY JARS, FILL TO 1/8" FROM TOP. CAREFULLY WIPE RIMS AND SEAL WITH 2-PIECE CANNING LIDS.
PROCESS IN WATERBATH CANNER FOR 10 MINUTES (4500' above sea level). REMOVE FROM CANNER WITH CANNING JAR LIFTER AND LET COOL IN DRAFT-FREE AREA.
WHEN COOLED, TEST FOR SEAL BY PRESSING IN THE CENTER. IF THERE IS ANY GIVE, REFRIGERATE AND USE FIRST.

The cherry juice can be made by cleaning and stemming 3 or 4 quarts of cherries. place them in a large kettle and cover them with water. Bring to simmer and simmer for about 20 minutes. Drain and measure. Any leftover juice is good for drinking.
