2 Cups baked fish, flaked (I bake a couple of fresh filets, or you can buy canned fish)
2 medium size baking potatoes – peeled, boiled, mashed, and set aside (or dried instant potato flakes)
2 stalks green onion, chopped
1 stalk celery, chopped
½ green bell pepper, chopped
4 toes garlic, chopped
1 medium onion, chopped
3 tablespoons chopped fresh parsley
Liquid crab boil
Cayenne pepper
Granulated garlic
Salt to taste
Fresh squeezed lemon juice
2 eggs
Fish fry
Peanut oil

Directions:
Directions:
In a large mixing bowl, flake the fish to ensure that there are no bones.
Beat the eggs and add to the flaked fish.
Add the chopped seasonings, and mix.
Add the smashed potatoes – a little at a time. (or the instant potato flakes) You want the mixture to be the consistency of peanut butter.
Add a capful of liquid crab boil (will kick the flavor up a notch)
Salt, pepper, granulated garlic to taste
Form the mixture into patties
Dust the patties in the fish fry
Heat about 2 inches peanut oil in a heavy skillet (I used a black cast iron skillet)
Fry the cakes, turning frequently, until golden brown.
Squirt a little lemon juice on top, if desired.
