Preheat oven to 375º

20 rolls pistollette bread
3 Pounds shrimp or crawfish (peeled and cleaned).
1 Cup butter or margarine (2 sticks)
2 Large onions finely chopped
1 Teaspoon minced garlic, or 3-4 cloves (to taste)
3 - 4 Ribs celery finely chopped
1 Bell pepper finely chopped
1 Can cream of mushroom soup
1 Can golden mushroom soup
1 Can cream of cheddar cheese soup
Red pepper to taste

Filler (or Etouffee Stuffing)

Melt butter or margarine over medium heat.
Add vegetables and saute for 10 minutes.
Add soups and mix with vegetables.
Add shrimp or crawfish and simmer 15 - 20 minutes.
Add red pepper to taste.

Heat pistollettes for 5 - 6 minutes, then set for 5 - 6 minutes.
Using your finger, make an opening or "well" in the center of each pistollette. (be careful not to tear bread apart).
Fill opening with filling.
Place in oven for 3 - 5 minutes.
Garnish with fresh green onion and parsley.
