Preheat oven to 350º

4 Slices bacon, diced
1/4 Cup chopped onions
1/2 cup chopped celery
1 1/2 Cup bread crumbs
1 Teaspoon salt
1/2 Teaspoon pepper
1/2 Teaspoon poultry seasoning
1 Package frozen corn, thawed
8 Double-rib pork chops, 1 1/2 inch thick with pocket

Directions:
Directions:
Fry bacon and set aside.
Add onions and celery to bacon fat and saute until tender.
Remove from heat.
Add bread crumbs, seasonings and corn to make stuffing. (You can add 1/3 cup of milk at this time if you desire a moister stuffing.)
Stuff pork chops with stuffing.
Fasten with toothpick.
Place chops on rack in uncovered baking pan and bake 1 hour or until tender.
