Cake: 2 C flour, 1 1/2 tsp. baking soda, 2 tsp. baking powder, 2 tsp. cinnamon, 1/2 tsp., salt, 1 1/2 C sugar, 4 eggs, 1 C oil, 1 C crushed pineapple, drained, 2 C grated carrots, 1 C unsweetened coconut

Cream Cheese Frosting:
8 oz. cream cheese
4 T. softened butter
1 T. vanilla
2 C powdered sugar
3 T. grated orange zest (optional)

Cake:
Mix the dry ingredients. Add all the remaining ingredients and mix well. Pour into two greased and floured 9" cake pans, or one 9 x 13 pan. You can also make roughly two dozen cupcakes. Bake at 350º for 35-45 minutes or until a toothpick comes out clean. (The baking time will be shorter for cupcakes.) Allow the cake to cool slightly but not completely before removing from the pan.

Frosting:
Cream the ingredients together and spread onto a cooled cake!

This is a favorite at the Neukom house! We don't opt for nuts or raisins in our carrot cake, but they could be added.
