Ingredients: Peanut sauce for stir fry Soba Noodles (pre cooked) Miso dried soup packet red or white
1/4 onion cut into long thin pieces garlic 1 bell pepper cut into long thin pieces 1 can water chestnuts sliced 1 fist of fresh or frozen spinach 1/2 box of firm tofu

Directions:use a Wok, pot or skillet sprayed with Pam or EVOO 1. Put the Miso powder in a cup and add water and mix in the cup and pour in to the Wok on medium heat 2. Add onion and garlic 3. Add spinach, bell pepper, water chestnuts 4. Add Peanut sauce 5. Add soba noodles Cover and cook for 15-20 minutes, stirring occasionally. Put into bowls and add tofu on top. |

Notes: I got the essential parts of this recipe from a woman in a group I joined after my first child Kathryn was born called "New Mom's Coffee". It was a bunch of women who just had a baby and didn't have a lot of family around. This recipe came up because it is easy to throw together without a lot of prep. In the first three months after Kathryn was born I ate a lot of cereal and crackers with cheese and hummus. I was hungry, but I was also tired. After I heard about this stir fry recipe I made a lot of different variations. The essential parts that you have to have and can keep stock piled are the Peanut sauce, Miso soup powder, Soba noodles, Tofu and water chestnuts. As long as you have these ingredients you can just throw in what ever else you have in the fridge.
