9" refrigerated piecrust
1 Tbsp. olive oil
2 medium onions, chopped (I buy a bag of frozen chopped onions)
salt and pepper
1 c. fresh flat-leaf parsley, chopped (I never have this on hand, and I never miss it)
4 large eggs
¾ c. half-and-half
⅛ tsp. ground nutmeg
8 oz. Gruyere, grated (I have played around with cheeses. Sharp cheddar is yummy, too.)

Heat oven to 375°. Follow the instructions on the package for piecrust. Place on a baking sheet.
Heat 1 Tbsp. of the oil in a large skillet over medium-low heat. Add the onions and ½ tsp. each of salt and pepper and cook, stirring occasionally, until soft, 5 to 7 minutes. Stir in the parsley.
In a large bowl, whisk together the eggs, half-and-half, nutmeg, and ¼ tsp. salt. Stir in the onion mixture and the Gruyère. Pour the egg mixture into the crust. Bake until a knife inserted in the center comes out clean (or until a fork stands up in the middle), 35 to 40 minutes. Let sit for 5 minutes.
Enjoy! I double this, as pie crusts usually come two to a package.
