6 medium carrots, cut in 1/2" chunks
1/2 c. chopped green pepper
1/2 c. chopped onion
3 chicken breasts, cut lengthwise
1/2 tsp. salt
1 (10 oz.) jar sweet-sour sauce
1 (15 1/2 oz.) can pineapple chunks, drained
3 T. cornstarch
3 T. cold water
hot cooked rice

In crock-pot, place carrots, green pepper, and onion. Top with chicken breasts. Sprinkle with salt. Pour sweet-sour sauce and pineapple chunks over all. Cover. Cook on low 7 to 8 hours or high 3 1/2 to 4 hours. Remove chicken, keeping warm. Blend cornstarch and water. Stir into juices in crock-pot. Cover; cook on high 10 to 15 minutes. Season to taste. Serve over cooked rice.
