1 c. self-rising flour*
1 c. self-rising cornmeal**
1 T. sugar
3/4 c. buttermilk
1/4 c. vegetable oil
2 large eggs, lightly beaten
oil or butter for frying

Directions:
Directions:
In a large bowl, combine the flour, cornmeal, and sugar. Stir in the buttermilk, oil, eggs, and 1/3 cup plus 1 tablespoon water.
In a large skillet, heat 1" of oil over medium heat. Drop the hoecake batter into the hot oil, using about 2 tablespoons of batter per hoecake. Cook until browned and crisp on one side, then turn and brown on the other side, about 5 minutes per side. Set on a paper towel-lined plate to drain. If you somehow manage to have leftover batter, it will keep in the refrigerator for up to 2 days.

* Substitute 1 cup all purpose flour, 1 1/2 tsp. baking powder, and 1/2 tsp. salt

** Substitute the same amount of corn bread mix for the self-rising cornmeal. That should work fine.
