6 medium potatoes
1 rib celery, chopped in 1/4" pieces
1/2 onion, finely diced
Green Pepper, chopped in 1/4 " pieces
1 teaspoon salt and pepper
1/2 medium Roma tomato, diced in 1/4 " pieces
1 small cucumber, diced
1 Avocado, thinly sliced
3 eggs, hard boiled
1 raw egg
1 cup Mayonnaise
1 teaspoon mustard
1 teaspoon apple cider vinegar
1 tablespoon sugar
Spinach leaves for garnish

Peel 6 medium potatoes and cut into about 3/4 - 1" bite sized pieces and add to pot after rinsing. Top with water and sprinkle about 1 teaspoon of salt to water and bring to boil. WATCH CLOSELY, when potatoes start to boil, start timer for ten minutes to 11 minutes, no more! Remove from heat and drain. Cool down with ice or slow flowing cold water, you want to stop the cooking process or your potatoes will become mushy. After that let potatoes drain for thirty minutes.

In a large bowl add mayonnaise, mustard, sugar, vinegar, salt and pepper and 1 raw egg and mix well blending all ingredients.

Add potatoes and remaining chopped vegetables, dicing 2 eggs and adding to bowl, mix well and enjoy.

I like to garnish top with sliced egg, avocado, a little paprika and freshly diced spinach leaves

This is a rendition of our moms recipe but has always been a favorite for all of us. Mom taught all seven of us how to cook and create dishes with pride and definitely taste great. Thanks Mom !!
