1 whol chicken
2 Tbsp. Jamaican chicken seasoning
2 Tbsp. Old Bay seasoning
1 tsp. Mrs. Dash seasoning
1 ˝ tsp. salt
˝ tsp. ginger, grated
3 cloves garlic, chopped
1 ˝ tsp. pimento seeds
2 Tbsp. Jamaican/Indian curry powder
˝ tsp. tumeric
3 Tbsp. olive oil
2 medium carrots, diced
˝ onion
3 leaves sage
scallion and thyme, 2 stalks each
˝ green pepper
Scotch bonnet pepper (optional – very spicy)
1 medium Irish potato, diced

Directions:
Directions:
Cut chicken into small pieces. Add Jamaican seasoning, Old Bay seasoning, Mrs. Dash salt, ginger, garlic, tumeric, pimento seeds, sage, and curry powder. Let marinate for up to 4 hours or overnight. Add olive oil to Dutch oven pot on medium heat. When hot add the chicken and turn the heat on medium. Let chicken simmer until enough liquid is formed if not add 2 c. of water. Allow meat to cook until tender for about 45 minutes to an hour. Add carrots, Scotch bonnet pepper, onions, scallion, thyme, bell peppers and potato to pot and let simmer on medium to low heat until sauce thickens. Serve with Jasmine white or brown rice or just enjoy with a salad or steamed vegetable.
