1 medium white or yellow onion, diced
6 tablespoons (3/4 stick) butter
Two 14.5-ounce cans diced tomatoes
One 46-ounce bottle or can tomato juice
3 to 6 tablespoons sugar
2 teaspoons Knorr chicken bouillon
Freshly ground black pepper
1 cup white wine, most definitely not optional
1 1/2 cups heavy cream
1/4 cup chopped fresh basil
1/4 cup chopped flat-leaf parsley

Melt the butter in a large pot or Dutch oven. Saute onion in butter until translucent. Add diced tomatoes and tomato juice. Stir in 3-6 tablespoons of sugar to combat the acidity of the tomatoes. We usually use 5 tablespoons. Add bouillon and stir well. Add white wine. Add freshly ground black pepper, to taste. Stir to combine, heat almost to a boil, then turn the burner to low. Stir in the cream. Add the chopped basil and parsley and stir. Serve piping hot!
