1 bunch of lacinato or dinosaur kale, stems removed, rinsed and patted dry then chopped into bite sized pieces
½ cup raisins
1-2 oranges, chopped
¼-½ cup roasted unsalted sunflower seeds
¼-½ cup unsalted pumpkin seeds
salt & pepper
4 Tbsp fresh grated Parmesan cheese

Dressing:
1 real lemon juice (no fake stuff!)
1 Tbsp Extra Virgin Olive Oil
1-3 tsp local raw honey

Directions:
Directions:
Put all the ingredients (except the Parmesan cheese) into a large salad bowl.
Mix the dressing ingredients together and pour over salad.
Top with fresh grated Parmesan cheese and serve.
