2 Eggs slightly beaten
1 cup Milk
2 tsp. Sugar
1 cup sifted Flour
¼ tsp. Salt
1 Tbsp. Lemon Extract
Oil for frying

Directions:
Directions:
Add sugar to eggs, add milk. Sift flour before measuring, then mix together with salt. Stir into egg mixture and beat until smooth( like heavy cream). Add flavoring. Cover and refrigerate for 2 hours. Place approx. 3 inches of oil in pan, heat to 375º. Immerse iron into oil until hot. Shake off excess oil and dip iron into batter, only to depth of form, If batter goes over the top remove with a fork. Dip into hot oil. When foamy bubbles stop or rosettes are a delicate brown, remove, letting oil drip back into pan. if cookies are stuck, hit mold with a wooden spoon. Cool on a paper towel, open side down to let oil drain. Reheat iron as needed, If iron or oil is too hot, batter will not adhere to iron. If rosettes are not crisp, batter is too thick and needs to be thinned with milk.
