3-¾ cups sugar
1-½ cups light corn syrup
1 cup water
2 drams Gourmet Candy and Baking Flavoring Oils
Food Coloring
Powdered Sugar
Thermometer
Directions:
Directions:
Combine sugar, corn syrup and water in 2 qt. saucepan. Stir constantly over Medium heat only until sugar dissolves. Bring mixture to a boil without stirring.
When syrup temperature reaches 260º add coloring. Do Not Stir, boiling action will mix color into syrup. Remove from heat when temperature reaches 300ºF.
Stir in flavoring, avoid rising steam when stirring.
Place lightly greased baking pan on a folded towel or trivet.
Pour mixture onto greased baking pan.
When cool, break into bite size pieces and sprinkle with powdered sugar to keep from sticking.
Store in an Airtight Container.

TIPS:
Do not allow thermometer to rest on bottom of saucepan
Do not put candy in the refrigerator to cool
Use only Wooden or Metal utensils to stir mixture. (Plastic and Rubber will melt)
