1/2 Cup cooking oil
2 Cups medium chopped onions
1 Bell pepper, chopped
1/2 Gallon chicken stock or water
4 Cloves garlic, minced
A pinch of sweet basil
A pinch of thyme
A pinch oregano
Salt and pepper to taste
3 Bay leaves
Dash of Tabasco© (optional)
2 Pounds of shrimp, peeled and deveined.
2 Tablespoons dried for fresh parsley
1/2 Pint oysters, rinsed and drained
1 Can crabmeat
Gumbo file' (optional)

Oil and Flour for Roux

Heat oil in a 16 quart sauce pan over medium to low heat for 4 minutes
Slowly stir in flour until a paste forms
Add onions, celery, and bell pepper. Cook until wilted

In a large, heavy pot, add chicken stock to roux mixture.
Cook over medium heat for 2 hours
Add shrimp, parsley, green onion tops and cook for an additional ten minutes
Add oysters and crabmeat. Bring to a boil.
Serve over rice and add a dash of file.
