1 cup Yellow cornmeal
1 cup White flour
3 teaspoon Baking powder
½ teaspoon Salt
3 tablespoons Sugar
2 Eggs
1 cup Milk
3 tablespoons Melted shortening (Wesson Oil)

Directions:
Directions:
Mix and sift the dry ingredients. Combine the well beaten eggs, milk and shortening. Add to flour mixture, stirring only enough to blend. Fill greased muffin tins or corn stick (cast iron) pans ⅔ full, and bake in hot oven, 400-425 degrees for 20-30 minutes - depending on the size of the tin. Can add crisp crumbled bacon if desired.
