3 LARGE GREEN PEPPERS
1 1/2 LB. GROUND BEEF
2 TBSP. CHOPPED ONION
1 STALK CELERY, CHOPPED, OPTIONAL
SALT AND PEPPER TO TASTE
8 OZ. CAN TOMATO SAUCE
2 TSP. SUGAR
1/2 TSP. BASIL
2 CUPS COOKED RICE

350º 9X13" CASSEROLE DISH

BROWN GROUND BEEF WITH CELERY AND ONION. WHILE BROWNING BEEF, BRING A LARGE SAUCEPAN OF WATER TO BOIL. CUT PEPPERS IN HALF LENGTHWISE AND CLEAN OUT STEM, SEEDS AND MEMBRANE. DROP INTO BOILING WATER AND SIMMER FOR 5 MINUTES. REMOVE, DRAIN AND PLACE IN 9X13" CASSEROLE DISH.
COMBINE TOMATO SAUCE, SUGAR AND BASIL. POUR HALF OF THE MIXTURE INTO THE GROUND BEEF. ADD THE RICE AND STIR TO COMBINE. FILL PEPPERS WITH MEAT MIXTURE. ANY EXTRA CAN GO BETWEEN THE PEPPERS.
COVER WITH FOIL AND BACK FOR 30 MINUTES. REMOVE FOIL AND SPOON REMAINING SAUCE ON TO OF THE STUFFING. RETURN TO OVEN FOR 10 MINUTES.
