3/4 C warm milk
1 T. yeast
1/3 C softened butter
1/2 C instant mashed potatoes
1/4 C sugar
1 egg
1/2 tsp. salt
3 - 3 1/2 C flour

Directions:
Directions:
In a mixing bowl, let the yeast proof with the warm milk and sugar. Add the softened butter, mashed potato, salt and egg. Add the flour little by little, beating until smooth at the heavy batter stage. Continue to add flour with the dough hook until a soft dough begins to clean the sides of the bowl.

Let the dough rise until double - about an hour. At this point, you can make it into any desired shape. It has a high butterfat content and is easy to work with. We usually roll it into a large round, cut as you would a pizza and roll each "slice" into a crescent roll.

After shaping, allow the rolls to rise for about 30 more minutes. Bake at 400º for 12-15 minutes or until golden. Brush with melted butter when they come out of the oven.

The Neuks usually make these for holiday gatherings. I haven't found a dinner roll recipe that I like more! The recipe doubles well, which is good since a single batch only makes about a dozen rolls - which means the Neukom boys could polish off a batch on their own!
