2 cups Self-rising cornmeal
1 Egg
Salt and pepper to taste
2 cups Boiling water

Directions:
Directions:
In a bowl cornmeal, eggs, salt and pepper. Stir well. Pour in boiling water and stir until you get a creamy consistency. Spoon into a hot well greased skillet and cook until a spatula goes under well without sticking. Turn and brown other side. For a real taste treat, add about 4 tablespoons of salsa to the mixture. Also like to add a little chopped onion to the mix.
