2½ cups Sugar
2 cups Grated zucchini (2 medium)
¼ teaspoon Baking powder
1 teaspoon Baking soda
3 teaspoons Cinnamon
1 cup Chopped walnuts
1 cup Oil
3 Eggs
3 teaspoons Vanilla
3 cups Flour
1 teaspoon salt

Directions:
Directions:
Finely grate unpeeled zucchini. Beat eggs, add oil, sugar, zucchini and vanilla. Mix, lightly, but well. Add remainder of ingredients and mix well. Bake at 325 for at least one hour. Bread should be spongy but not dry. Makes 2 regular loaves or 4 small or 7-8 very small loaves (bake at 45 minutes).
