2 pork tenderloins
2 lbs. red potatoes, quartered
1 lb. carrots, halved and cut into 2-inch pieces
1 onion cut into wedges
1 tbsp. olive oil
2 tsp. dried rosemary, crushed
1 tsp. rubbed sage
½ tsp. salt
¼ tsp. pepper

Directions:

1. Preheat oven to 450º. Place the pork in a shallow roasting pan coated with cooking spray.; arrange potatoes, carrots, and onions around pork. Drizzle with oil. Combine the seasonings; sprinkle over meat and vegetables.

2. Bake, uncovered, 25-35 minutes or until meat and vegetables are tender, stirring vegetables occasionally. Remove roast from oven; tent with foil. Let stand 5 minutes before slicing.

If meat is done before vegetables, take the pork out and keep warm, continue cooking vegetables until they are tender.
