2 tbsp. Curry
1 1/2 tbsp Vegetable Oil
1/2 Onion, finely diced
4 Garlic cloves, minced
2 lb Chicken, cut into 1/2 inch cubes
Hot Spices (3 habaneros, red pepper flakes, cayenne. This is where you control your spice level)
14 oz can Coconut Milk
14 oz can Tomatoes (or Hot Rotel for extra heat)
8 oz can Tomato Sauce
1/2 tbsp. Sugar
2 tsp Cornstarch

Directions:
Directions:
1. Mix curry and oil to create thick paste. Heat in large saucepan for one minute until very hot.
2. Add onion and garlic and saute for one minute.
3. Add chicken and hot spices to curry mixture and cook until no longer pink, about 7 minutes, it'll be really thick.
4. Add everything but the cornstarch, stir to combine, bring to a boil, and let simmer with lid on for 30 minutes.
5. Remove lid, add cornstarch, simmer an additional 10 minutes.
5. Serve over rice or with naan.
