½ c. canola oil
4 squares unsweetened chocolate--melted
2 c. sugar
4 eggs
2 t. vanilla
2 c. flour
2 t. baking powder
½ t. salt
powdered sugar

Directions:
This recipe needs to chill several hours or overnight before baking.
Mix together oil, chocolate, and sugar. Blend in one egg at a time until well mixed. Add vanilla. In small bowl mix together flour, salt and baking powder. Add to chocolate mixture and mix until well blended. Chill several hours or overnight in a covered bowl.
Preheat oven to 350º Grease cookie sheets.
Place powdered sugar in a small bowl--add more as needed. Drop teaspoonfuls of dough into powdered sugar and roll around to shape into a ball. Place 2" apart on greased cookie sheet. Bake 10-12 minutes. Cool on wire rack and store in covered container.

Mom made these cookies at Christmas time and included them in her gift boxes she sent to our Smith family. They have been a favorite of our family ever since since the powdered sugar looks like snow.
