Oyster Dressing Recipe

1 loaf French bread (preferably stale)
1 quart Oysters (fresh not washed)
Oyster water
˝ large Onion
1 Whole garlic
3 stalks Celery
˝ Green pepper
1 stick Butter
Pepper (salt only if oysters are not salty)
Bread crumbs

Directions:
Directions:
Preheat oven to 350°
Finely chop onions, garlic, celery, and green pepper
Break bread into small pieces and sock in oyster water
Chop oysters
Melt butter in large skillet (do not brown butter)
Sauté seasonings in butter (season with salt and pepper)
Squeeze water out of bread
Add bread to seasoning mixture and cook for a few minutes until well combined
Add oysters and oyster water
Continue cooking until oyster are fully cooked (add a small amount of bread crumbs if needed for consistency)
Put dressing into a baking dish
Sprinkle the top with bread crumbs and dot with additional butter
Bake for ˝ hour until firm
