1" - 1 1/2" small red or yellow potatoes

Wash potatoes, do not peel, and cut in half. Cover bottom of skillet with oil no more than 1/8" deep. Heat oil over medium heat until it begins to shimmer. Sprinkle a thin layer of salt, as evenly as possible, over the oil. Place potato halves, cut side down, onto the salt. Fry at medium heat uncovered until you are sure the potatoes must be burning...they're not...for 12 to 15 minutes. After 12 minutes check bottom side of a potato half to see if it is nicely browned. If it is not, continue cooking for a few more minutes. When they are browned, turn the heat to as low as possible and cover the skillet. You will hear spattering noises as the potatoes start to steam. They will continue to brown under the cover. Cook covered for 20-25 minutes until a sharp knife slips into a potato easily. Note: Kept covered with the heat off they will keep for 30 minutes or more at serving temperature.
