1 pound red potatoes, cut into 1-inch pieces
1 pound peeled parsnips, cut into 1-inch pieces
1 pound peeled carrots cut into 1-inch pieces
8-ounces slab bacon cut into ½-inch pieces
3 Tablespoons olive oil
2 Tablespoons chopped sage
a few sage sprigs
6 sliced garlic cloves
½ teaspoon chile powder

Directions:
Directions:
1. Preheat oven to 425º F.
2. Place potatoes, parsnips, and carrots, into a large baking pan.
3. Add the remaining ingredients, (bacon, olive oil, chopped sage, few sage sprigs, sliced garlic cloves and chile powder) and toss well.
4. Place pan in oven and roast until tender and golden, approximately 40 minutes.
5. Season with salt and toss with chopped parsley.
