Ingredients: 1 lb. chicken livers 1 cup buttermilk 1-1/2 cup self-rising flour (Self rising makes the coating better) 2 tsp kosher salt 3 tsp fresh ground pepper 4 tbsp Paprika ( I know, sounds like a lot but trust me) Vegetable oil (I like using peanut oil)
Cracked Pepper Gravy: ¼ cup unsalted butter 5 tbs flour 1 ½ tsp kosher salt 2 ½ cups milk 4 tsp cracked pepper

Directions:Place chicken livers in buttermilk and let stand for 10 minutes. Drain in a colander. In bowl mix flour, salt, pepper and paprika. Roll chicken livers in flour. In deep fryer, heat oil to 350*. Fry livers for about 3 minutes, or until brown. Drain and serve with gravy on the side.
Gravy: Melt butter, and when foam goes down whisk in flour. Continue whisking until flour cooks and becomes a fragrant light brown. Slowly whisk in milk. Continue whisking to keep lumps from forming. Season with salt and pepper. Simmer for about 10 minutes to cook and reduce. |

Notes: My sister and I are the only ones in our family who like these, but that’s not at all a surprise since we always run ahead of the pack. This is how I fix them for her, when I can. The recipe is short and simple because the real taste comes thru on its own.
