3 large baking potatoes--can be baked ahead of time 400º for one hour until tender
½ c. milk
4 oz. light soft cream cheese
1 ¾ c. shredded sharp cheddar cheese
⅛ t. garlic salt
¼ t. black pepper
2 green onions, finely chopped
½ 5 oz. pkg. frozen chopped spinach, thawed and drained and squeezed dry

Preheat oven 400º Spray 9" x 13" baking dish with Pam.
Cut cooled potatoes in half lengthwise. Scoop out pulp leaving ¼" shell and place shells in baking dish. Mash pulp with potato masher. Whisk together cream cheese and milk. Add potato pulp, 1 c. cheddar cheese, garlic salt, pepper, green onions and spinach--stir until combined. Spoon mixture into shells. Top each half with remaining cheddar cheese. Bake for 15 minutes. Can be made ahead and chilled until baking--may need more baking time to heat through.
