2 lbs codfish presoaked
2/3 cup olive oil
2 thin slices onion
2 cloves garlice, sliced
1 bay leaf
1 thyme leaf
1 small can tomato puree
2 cups chopped celery
1/4 cup chopped parsley (2 tsp dried)
1 cup dry white wine
4 diced potatoes
salt and pepper to taste

Directions:
Directions:
Cut fish into pieces, skinned and boned. Heat all but 3 tablespoons oil in large pan. Saute onion and garlic til golden. Add celery, thyme and bay leaves, parsley. Cook slowly. Add puree and cook 10 minutes.

Add wine and cook til some liquid is absorbed. Add potatoes and about 5 cups boiling water. When potatoes are tender, remove thyme and bay leaves. Add fish with remaining olive oil. Cook over heat about 1 hour.
