3 sliced onions
Butter or bacon fat
6 cups beef broth
1/3 cup dry sherry wine
Crisply toasted French bread (one slice for each bowl)
Grated Swiss or Parmesan cheese

Directions:
Directions:
Preheat oven to 350º

Saute onions until soft in butter or bacon fat. Add well-seasoned beef broth and dry sherry wine. Simmer 15 minutes.

Ladle into oven-proof pottery bowls. Top with slice of crisply toasted French bread. Sprinkle with grated Swiss or Parmesan cheese. Heat in oven until cheese melts and a slight crust forms on top of soup.
