Persimmon Bars Recipe

2-3 persimmons, pureed to make 1 cup (use Fuyu that have ripened to soft stage--pointed ends)
1 t. baking soda
1 ½ t. lemon juice
Dry ingredients: 1 ¾ c. flour
1 t. salt
1 t. cinnamon
1 t. nutmeg
¼ t. cloves
Sugar mixture:1 c. sugar
1 egg
½ c. canola oil

1 c. chopped walnuts or pecans
1 c. raisins or chopped dates (8 oz. pkg.)

For glaze: 1 c. powdered sugar
2 T. lemon juice

Directions:
Directions:
Preheat oven to 350º Grease and flour a 10" x 15" pan.
Stir lemon juice and baking soda into 1 c. pureed persimmon and set aside (it will thicken)
Stir together flour and spices and set aside.
Mix together sugar, egg and oil in large bowl. Add dry ingredients, alternating with persimmon mixture until all ingredients are mixed together. Stir in nuts and dried fruit you have chosen.
Spread mixture evenly in prepared pan. Bake 25 minutes.
Mix together powdered sugar and lemon juice. Spread glaze over top of of bars after removing from oven and while still warm. Cool on wire rack. Cut into squares.
