1 SMALL ONION, CHOPPED
1 1/2 TO 2 CUPS CHICKEN BROTH
2-3 TBSP. CHICKEN FAT OR OIL
1 CUP DICED CHICKEN MEAT
SALT AND PEPPER TO TAST

GRATED PARMESAN CHEESE

COOK ONIONS AND RICE IN SKILLET UNTIL ONIONS ARE YELLOW. STIR TO PREVENT RICE FROM BURNING. CAREFULLY ADD BROTH, CHICKEN AND SEASONING. STIR. COVER AND COOK ABOUT 20 MINUTES OR UNTIL BROTH IS ABSORBED AND GRAINS ARE SWOLLEN. SERVE WITH PARMESAN CHEESE. WHITE RICE MAY BE USED, BUT THE BROWN RICE IS MORE NUTTY AND NUTRITIOUS.

Another family favorite that our family swooned over. Because I feed 2 hungry men and myself, I always triple this recipe so I have enough for lunch for a couple of days.
