5 lbs. red potatoes
4-5 hard boiled eggs
chopped onion to taste
salt to taste
pepper to taste

Dressing:
2-1/2 c. Miracle Whip
3-4 tbs. mustard
1/4 c. sugar
1/4 c. vinegar
1 to 2 tbs. fat free half and half

Directions:
Directions:
1. Boil potatoes with peelings on until tender. Let cool, peel and cube.
2. Boil eggs, let cool, peel and slice.

Dressing:
3. Stir together Miracle Whip, mustard and sugar. Then add vinegar, and finally add half and half.
Can adjust amounts to personal taste.

4. In a large mixing bowl, add potatoes, onions, salt, pepper, and dressing. Mix together.
5. Add eggs and mix gently.


*TIP for cooking hard boiled eggs.

1. Place eggs in sauce pan and cover with water.
2. Bring to a boil for two minutes and turn off heat. Let stand for fifteen minutes.
3. Rinse in cool water.
