2 cups dry lentils
2-1/2 qts water
1-1/2 tsp salt
1/4 tsp pepper
1 bay leaf
2 whole cloves
dash cayenne pepper
1 ham bone
1/4 cup butter
1 large carrot, chopped
1 large onion, chopped
3/4 cup chopped celery
1 clove garlic, minced
6 frankfurters
chopped parsley

Directions:

Wash lentils. Place in large kettle with water, salt, pepper, bay leaf, cloves and cayenne pepper. Add ham bone. Bring to a boil; reduce heat to simmer. Cook vegetables and garlic in butter for 10 minutes. Add to lentils. Add frankfurters and simmer gently about 2 hours. Remove frankfurters and ham bone, set aside. Discard bay leaf and cloves. Strain soup through a food mill or wire strainer. Cut meat from ham bone in small pieces, slice frankfurters and add them to the soup. Reheat soup; correct seasonings. Garnish with parsley.
