DOUGH:

3 eggs
2-1/2 to 3 cups flour
1/8 tsp salt
1 tsp sugar
1/4 cup milk
1/4 cup oil
1 egg yolk (for glazing
1 T water (for glazing)

FILLING:

5 eggs and 1 egg white, beaten
1 lg (46 oz) Ricotta cheese
1/2 cup Romano cheese, grated
1 cup or 1/2 tick Pepperoni, grated
1 lb ham, shredded
1/2 lb Provolone cheese, grated
1/2 lb Mozzarella cheese, grated

Preheat oven to 350º

DOUGH:

In a bowl, beat eggs and combine all other ingredients to make dough. Transfer dough to board and knead dough until smooth. Let rest 1/2 hour.

FILLING:

In a separate bowl, combine eggs, pepperoni and Ricotta, Romano and Provolone cheeses. Mix well with fork.

TURNOVER:

Divide dough into 4 (8 oz) pieces. Roll dough into rectangle shape 10x15 inches. Using commercial serving spoon, place 4 spoons of filling 1 inch from edge to center. Level filling with spoon, then place the dough top over filling to bottom making a large turnover or calzoni. Press edges with tines of fork. (Optional -- trim dough with ravioli cutter; collect all dough scraps to make last turnover.)

Using 2 plastic pancake turners, place turnover on large cookie sheet greased with cooking sheet. Continue to make 3 more turnovers. (Two turnovers fit on large cookie sheet.) Using fork, prick top of turnovers several times.

Add water to egg yolk, mix. Brush yolks on top of turnovers before placing in oven.

Bake for 15 minutes. Prick top again and return to oven for 30-40 minutes or golden brown. Let cool; slice down to serve as an appetizer.

Ham and Mozzarella not added to filling. Not sure, if it is an either/or situation (ham or pepperoni) (Provolone or Mozzarella) or just forgotten. My guess is either/or
