6 ears sweet corn
2 jalapenos seeded and diced
1 small red onion, diced
1 yellow pepper, diced
2 tomatoes, diced
1 clove minced garlic
salt & pepper to taste
lime juice
¼ tsp. chili powder
¼ tsp. cumin
olive oil

Directions:
Directions:
Husk the corn and brush with olive oils. Heat grill to medium-high. Place corn on grill and grill until corn is slightly charred, remove from heat and cool. When corn has cooled, cut off the cob and put in bowl. Add diced jalapeno, tomatoes, garlic, red onion, and yellow pepper. Mix well add juice of 1 lime and cumin and chili powder, salt & pepper to taste and a drizzle of olive oil. Chill,
