8 ounce package of challenge cream cheese softened.
1/4 cup of Challenged butter, softened
2 lbs powdered sugar
1-2 tsp of mint extract
gel food coloring
1/2 cup powdered sugar for rolling mints.

Directions:
Directions:
Combine cream cheese and butter in large mixing bowl and mix until smooth.
Add 2 cups of powdered sugar mix until smooth.
Add mint extract and mix until smooth.
Gradually , add the remaining powdered sugar mix until smooth.
Separate mixture into 4 separate bowls, add food coloring that you want stir into each bowl.
Cover and place into refrigerator for at least 2 hours or until firm enough to roll into balls.
Line pans with parchment paper and lightly dust with powdered sugar.
Pinch off small amount of dough to make a 1 inch ball. Roll each ball into powdered sugar and place on sheet pans. Gently press fork into the top. Let stand for 4 hours or until firm then place in refrigerator.
