Ingredients: ½ c. flour ½ tsp. salt ½ tsp. black pepper 6 boneless chicken breast, pounded to uniform thickness 2 tbsp. butter ½ c. olive oil 1 medium onion, chopped 4 cloves garlic, minced ¾ c. wine 3 14.5 oz. crushed tomatoes 2 tbsp. sugar ¼ c. chopped parsley 1½ c. grated parmesan cheese 1 lb. thin linguine

Directions:Mix flour and salt & pepper on a large plate. Season chicken breast on both sides with salt & pepper. then dredge in flour mixture. In a large skillet over medium high heat, melt the butter and olive oil until sizzling. Fry chicken breasts until light and golden brown. Remove chicken from skillet and keep warm. Add onions to same skillet and sauté until brown. add garlic and cook another minute. Pour in the wine to deglaze the pan. Allow the wine to cook down until reduced by half. Pour in the crushed tomatoes, add sugar and salt & pepper to taste. Stir to combine. Reduce heat to low and allow to simmer for 30 minutes. Add the chopped parsley and ½ cup of the parmesan cheese. Lay chicken breast on top of the sauce and cover them with the remaining parmesan cheese. Cover the skillet and simmer until the cheese is melted and the chicken is heated through, about 5 minutes. Place the cooked pasta on plate and cover with sauce. Place chicken on top and sprinkle with parsley. |
