Pancake Ingredients:
6 eggs
1 C milk
1 C all purpose flour
½ tsp salt
2 T butter, melted

Syrup Ingredients:
1 ½ C sugar
¾ C buttermilk
½ butter
3 T corn syrup
1 tsp baking soda
2 tsp vanilla extract

powdered sugar (optional)
Directions:
Directions:
In a blender or food processor, combine all pancake ingredients, except butter, until smooth.
Pour the butter into a 13 x 9 in baking dish, then pour in pancake batter.
Bake at 400º for 20 minutes.

While pancakes are cooking, make syrup.
In a large saucepan or pot, add all syrup ingredients except vanilla. Bring to a boil, stirring frequently. Boil for 7 minutes. Remove from heat and add vanilla.

After removing pancakes from oven, dust with powdered sugar, if desired. Serve immediately with hot syrup. Remaining syrup will last for a long time in the refrigerator.

This has been a favorite breakfast for my family since my kids were little. Every time they come to visit, I know I will be making it for breakfast. It has also become a favorite of my step-grandson, who comes up to stay with us frequently.
